Cheesecake Pancakes

I tweeted the other night that we were making Cheesecake Pancakes for dinner.  Yes, I'm the gal who loves having breakfast for dinner. And I love love love pancakes.

I immediately got several "give me that recipe" responses... especially after tweeting a picture...


Oh sweet heavenly goodness.

{Disclaimer - my husband did much of the pre-work, which included making said cheesecake. Thanks Hubby.}


INGREDIENTS for pancakes
1 1/4 cup flour *
1 1/4 cups buttermilk **
1 large egg
1/4 cup vegetable oil
1/4 cup sugar
1 tsp baking powder
1 tsp baking soda
pinch of salt
2 cups chopped frozen cheesecake ***

INGREDIENTS for strawberry sauce
1 1/2 cups strawberries, hulled and sliced
2 Tbsp seedless strawberry jam
2 Tbsp warm water

DIRECTIONS
1. Mix the strawberries, jam and warm water in a bowl; set aside. Preheat oven to 200 degrees.

2. Pulse the flour, buttermilk, egg, oil, sugar, baking powder and soda and salt in a blender until smooth. (We just sifted the dry ingredients through a fine sifter and then added milk, egg and oil.)  Take pancake batter and stir in cheesecake pieces, keeping them whole. (Meaning don't smash them up... the bigger the better!)

3. Using a griddle or skillet, make the pancakes (umm, you know how to do this part, right?). Keep them warm on a baking pan by placing them in the preheated oven.

4. Serve with all the goodness of butter, strawberry sauce, confectioners' sugar, whipped cream, syrup and/or any other goodness you can find!

My notes:
* We used boxed pancake mix.
** We used almond milk instead of buttermilk or even cow's milk.
***  Hubby used the easy no-bake cheesecake stuff - delish!!

Seriously... heavenly.  My only advice... try a piece of pancake with cheesecake in it before adding any toppings or syrup. So good.

A cheesecake pancake!? You are seriously going to kill me. I am a huge fan of breakfast for dinner. I do it at least once a week.
